One of my challenges and delights as a lover of Scandinavian food is to develop recipes that I call "Northern Lites" - new, healthier takes on traditional recipes that originally required heart-busting amounts of cream and butter. While I'm not having much luck transforming Scandinavia's famous butter cookies into health food, I compensate for this by making sure that most of our everyday main dishes are as low-fat as possible. One quick and healthy favorite entrée in our household is Cauliflower with Curried Shrimp Sauce (in Swedish, Blomkal med Currykryddad Räksas). It's so light and delicious that we don't miss the absent cream.
Plus it allows us to justify an occasional butter cookie. Or two.
