Few cultures take their pancakes as seriously as the Scandinavians. Pancakes are the ultimate in frugal comfort food, taking very little fuel or time to prepare (a factor in Iceland, which was deforested quickly after its settlement), and often created from leftover ingredients like oatmeal, rice porridge, or rice pudding. While Scandinavians also enjoy delicately thin crepes and silver-dollar-sized pancakes made from scratch, it's hard to beat "second helping" versions like these thick, wonderfully rustic rice porridge pancakes.
