We recently returned from a rather exciting vacation (don't ask - multiple medical clinics and hospitals were involved, which is why I haven't blogged for a while), to find our young apple tree so loaded with fruit that its poor branches brushed the ground (I think it was trying to tell my husband something about doctor avoidance). We have enough apples to eat one a day for the next month, both raw and cooked into this healthy and delicious Apple Spelt Bread.
