When life gives you apples ... make cardamom applesauce! It took me years to venture into making homemade applesauce for my family. I had very vivid memories of how long it took my mother to process the stuff when I was young - chopping bushels of apples, cooking them slowly, then pressing them in an endless process through a fine-meshed sieve with a wooden stick. Fortunately for our kids, Mom is also forward thinking - and thus was the one who taught me a few years ago how to make applesauce in the microwave in 10 minutes flat. Thanks, Mom!
