Apple Lingonberry Pie (Spelt Crust)

It isn't often that I publish a photo of a dish before its completed, but I couldn't resist sharing a racy photo of my Apple Lingonberry Pie with you while it was still topless - showcasing the tiny, perfect lingonberries I harvested from my plants last week! With the addition of a peek-a-boo spelt lattice crust, this pie will knock your socks off - less sour than cranberries, the sweet-tart lingonberries impart an unparalleled flavor to the sliced apples (in addition to being very, very cute).
