Jordgubbstårta – Swedish Strawberry Cake

Simplified by the use of a prepared cake mix, Jordgubbstårta showcases the first strawberries of summer.

  • 1 box white cake mix
  • 1/2 cup strawberry jam or preserves
  • 1 1/2 cups whipping cream
  • 1 tsp. vanilla extract
  • 1/4 cup sugar
  • 2 1/2 to 3 cups fresh strawberries.


Prepare cake as directed on box, pouring 2/3 of batter into one circular cake pan and the remaining 1/3 of batter into the second cake pan. Bake cakes, cool, remove from pans, and slice larger cake into two equal layers.

Whip together cream, vanilla extract, and sugar until stiff peaks form. Roughly chop 2 cups of the strawberries; slice remaining berries to garnish cake.

Spread 1/2 of strawberry jam on bottom cake layer, followed by 1/4 of the whipped cream. Sprinkle with 1/2 of chopped strawberries. Cover with middle cake layer and repeat.

Place top layer on cake, frost with whipped cream, and garnish with sliced strawberries. Refrigerate until serving.

Yield: 12 servings.
