Cookie floaters lend an extra sparkle to Scandinavian fruit soups and compotes.

The next time you bake a batch of rolled cookies like ginger cookies or Grandmother's Jelly Cookies, use a miniature cookie cutter to cut out decorative "floaters" from the dough scraps for use with dessert soups and compotes...or simply save the centers left over from a linzer cookie cutter. Brush the floaters lightly with water or egg white, sprinkle with cinnamon and sugar (pearl sugar if you can get it), and bake in a 350º oven for 5 minutes, or until light golden. Store in an airtight container or freeze for later use.
