Scandinavian Beet Apple Salad

Want to get kids to eat their beets? Pair them with chopped apples in this colorful salad.

Total Time: 10 minutes

Yield: 6 servings

Ingredients:

  • 2 cups pickled beets
  • 2 apples, peel on, cored and chopped
  • 1/2 onion, chopped fine
  • 5 sweet gherkin pickles, chopped fine
  • 1/3 cup diced celery
  • 1/2 cup sour cream or creme fraiche
  • 1 heaping Tbsp. creamed horseradish

Preparation:

Drain the pickled beets from their brining juice, rinse well, pat dry with a paper towel, and chop fine. Place in bowl and mix in chopped apples, onion, gherkins, and celery. Whisk together sour cream and horseradish, then gently fold into salad. Refrigerate until serving.
