New potatoes serve as an easy yet elegant appetizer when garnished with sour cream and red and white lumpfish caviar.

Ingredients:
- 20 small new potatoes
- 1 cup sour cream or crème fraiche
- 1 2-ounce jar black lumpfish caviar
- 1 2-ounce jar red lumpfish caviar
Preparation:
Scrub the new potatoes, then boil until fork-tender (20 to 30 minutes). Rinse potatoes and cut in half.
Gently spoon the caviar onto paper towel-lined plates to drain.
Place potatoes on a serving dish and top each one with a dollop of sour cream and a tsp. of caviar.
Yield: 40 new potato with caviar appetizers as part of a smorgasbord table.
